Why don't my oatmeal scotchies EVER come out right?

Parchment paper will help a lot. Also try turning down the heat on your oven. A too hot oven will cause cookies to flatten out too quickly before they have risen properly. Turn it down about 25 degrees and bake them a few minutes longer.
